Cardoon Café & Provisions was born from a simple idea: bring exceptional food, thoughtful ingredients, and genuine hospitality together under one roof.

Our Story

In 2021, we opened Sylvan Table — a restaurant that truly embodies the
farm-to-table movement. 


Although our journey began many years before opening our doors — through research, planning, and more than a few leaps of faith — nothing could have prepared us for the adventure that followed.

 

We’ve been fortunate to attract an extraordinary team of talented, humble, and electric individuals, each bringing something uniquely their own to the table creating a wonderful family.

The Team

As in any great restaurant, people grow, evolve, and eventually move on. Whatever direction they choose, we’re proud to have been part of their story and grateful for the imprint they leave on ours

 

Scott Martinelli joined Sylvan Table in 2021 as our executive sous chef. He is a bright, inventive chef who, during COVID, built a charcuterie closet and taught himself to make cheese while in isolation. Eventually, he moved on to become executive chef at a Detroit restaurant — but he never left our minds.

 

We kept asking ourselves: How do we bring this smart, likable, wildly talented chef back into the fold?

 

So, we dangled an idea we knew he couldn’t resist: a much needed deli for the community… and why not add a café and bakery under the same roof?

 

Our plan worked!

 

Today, we’re proud to introduce Cardoon Café & Provisions, led by Executive Chef Scott Martinelli, and joined by two Sylvan Table alumni chefs:

Gabe Cervantes, Sous Chef.

The Food

Our menu features house-made specialties, panuozzo and schiacciata sandwiches, exceptional meats and cheeses, fresh-baked goods, and a curated collection of pantry staples sourced from around the world. Every item on our shelves has been carefully selected, tasted, and chosen with intention.

At Cardoon, we believe great food starts with great ingredients, but it's the people who make a place special. We're proud to share what we love with our community and look forward to welcoming you.

The Name Has A Story

A cardoon is a thistle in the artichoke family—a vegetable that's long held a special place at our table. The name felt like the perfect reflection of who we are: rooted in tradition, a little unexpected, and deeply connected to food.
